Sweet Potato Souffle

3 c. sweet potatoes, baked & mashed
1 c. sugar
2 to 3 eggs
1 c. evaporated milk
1 stick margarine or butter
1 tsp. vanilla

Topping:
1 c. chopped pecans
1/2 c. flour
1 c. brown sugar
1 stick margarine or butter, melted

Mix sweet potatoes, sugar, eggs, evaporated milk, 1 stick margarine and vanilla and pour into buttered casserole.  You may make this first part of the recipe the night before you want to bake it.  Then before baking, mix pecans, flour, brown sugar, and melted margarine and put on top of casserole mixture.  Bake at 350º for 30 - 35 minutes......From the kitchen of Denise Feirer, WI.
