SUBSTITUTIONS  
1 ounce unsweetened chocolate 3 Tablespoons + 1 Tablespoon fat
1 cup buttermilk 1 Tablespoon lemon juice or white vinegar
1 cup half & half 1 - 1/2 Tablespoons butter + 7/8 cup milk or 1 cup evaporated milk
1 cup heavy cream 1/3 cup butter + 3/4 cup milk (will not whip)
1 cup sour cream 1 Tablespoon lemon juice + evaporated milk to fill 1 cup
1 Tablespoon cornstarch 2 Tablepoons all purpose flour
1 teaspoon baking powder

1/4 teaspoon baking soda + 1/2 teaspoon cream of tartar

1 cup cake flour 7/8 cup all purpose flour, then sift
1 cup self-rising flour 1 cup all purpose flour + 1 teaspoon baking poder + 1/2 teaspoon salt
1 clove garlic 1/8 teaspoon garlic powder
1 Tablespoon fresh herbs 1 teaspoon dried herbs
1 teaspoon allspice 1/2 teaspoon cinnamon + 1/2 teaspoon cloves
1 Tablespoon ginger, candied or raw 1/8 teaspoon powdered ginger
1 Tablespoon lemon grass 1 Tablespoon lemon peel
1 teaspoon lemon juice 1/2 teaspoon vinegar
1 teaspoon mustard, dry

1 Tablespoon mustard

1 pound fresh mushrooms

12 ounce canned mushrooms
