Hummingbird Cake

3 c. all-purpose flour
2 c. sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
3 eggs, beaten
1 1/2 c. salad oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple, drained
2 c. chopped banannas
1 c. chopped nuts

Mix well by hand. Combine dry ingredients; add eggs and salad oil and stir until well mixed. Add vanilla, pineapple, bananas, and nuts. Spoon batter into large greased and floured sheet pan. Bake at 350° for 40-45 minutes.

ICING:

1 box confectioners' sugar
1/2 c. butter
1 (8 oz.) package cream cheese
1 tsp. vanilla
1 c. chopped nuts

Combine first 4 ingredients. Sprinkle chopped nuts on top of icing.....From the cookbook, "The Recipe Hall of Fame Cookbook"
